Although ice cream has numerous varieties worldwide, ice cream sandwiches are one of the most-loved versions. It’s always exciting to go back to the basics and prepare this cool treat in your own style. Ice cream sandwiches are easy to prepare as you generally require biscuits, any fruit jam, a slab of ice cream, chocolate and some dry fruits. However, you can prepare your preferred ice cream sandwich on your own with the available ingredients available in your kitchen. Below are some ice cream sandwich recipes you can try out at home.
Cookie Ice Cream Sandwich
To make a cookie ice cream sandwich, you have to:
- Preheat oven to 375°F.
- To prepare cookies, take a bowl and add in regular flour, butter and eggs. Mix them well and bake them after giving them a round shape.
- Place them on a plate covering the surface with a butter-greased cookie sheet and put them in the preheated oven.
- Leave them to bake for 11 to 13 minutes or until the edges are light golden brown. Cool them down.
- Place 1 scoop of ice cream between two cookies and gently press cookies together for an ice cream sandwich.
- Next, roll ice cream edges in sprinkles.
- Serve and eat immediately or wrap sandwiches individually in plastic wrap and freeze until needed.
Brownie Ice Cream Sandwich
- To make the brownie, preheat the oven to 350°F.
- Take a 9-inch pan and line with foil, and hang some over the edges of the pan.
- Next, grease the bottom and sides of foil with shortening or cooking spray; Make and bake brownies after mixing eggs, powdered sugar, unsweetened cocoa powder, vegetable oil and vanilla extract in a bowl, and putting the mixture in the oven for 1.5 hours.
- Cool it down.
- Next, place a pan of brownies in the freezer for 30 minutes. Remove brownies from the pan and peel foil away. Cut brownies into 4 rows by 4 rows.
- To prepare the sandwich, take 1 scoop or 2 tablespoons of ice cream on the bottom of 1 brownie square. Top with second brownie square, bottom side down; gently press together. Roll sides in rainbow sprinkles. Place in a shallow pan and put them in the freezer for at least one or two hours.
- Finally serve.
Peanut Butter Ice Cream Sandwich
- Start by preheating the oven to 350°F.
- Take a large bowl and add in cream shortening, peanut butter, sugar, brown sugar. Mix them until the mixture is light and fluffy. Beat in egg and vanilla. Add flour, baking soda and salt to the creamed mixture and mix well.
- Roll into balls and flatten them. Place them on a plate covering the surface with ungreased baking sheets.
- Then bake them for at least for 9-11minutes. Cool them down completely.
- Melt candy coating in a microwave. Spread it on the bottom of each cookie. Place chocolate side up on waxed paper until set.
- For the sandwich, place a scoop of ice cream between two cookies and press them gently. Top with remaining cookies.
- Eat immediately or save for later by wrapping in plastic and freeze on a baking sheet until needed.
